Ingredients and Supplies
- All-purpose flour. You can switch this out for gluten-free flour if you’d prefer.
- Non-fat milk powder. I love the dairy flavor this gives these milky cookies.
- Kosher salt. Balances the cookies out well.
- Baking powder and baking soda. Ensure your raising agents are fresh batches.
- Butter. Use unsalted butter if you’re going to use Kosher salt in your recipe.
- Granulated sugar. You can also use caster sugar in this batch.
- Light-brown sugar. Lightly packed. This sugar gives the cookie its soft and chewy texture.
- Egg. Choose a large egg at room temperature.
- Vanilla extract. You can use vanilla essence or paste as well.
- Cornflake cereal. This is what gives these cookies their excellent crunch and crackle.
- Mini chocolate chips. Any kind of chocolate you like.
- Mini marshmallows. You can leave these out, but I wouldn’t!
How To Make These Cookies
Here is a step-by-step guide:
Step 1: Make the cookie dough
Whisk the flour, milk powder, salt, baking powder, and baking soda in a medium bowl and set aside.
Add the butter, sugar, egg, and vanilla into another mixing bowl. Beat on high for 2-3 minutes until creamy.
Add the dry ingredients in two batches, mixing on low until it just comes together.
Add the chocolate chips, and mix on low, scraping down the sides of the bowl as you go.
Add the marshmallows, mixing on low until evenly distributed. Reserve a handful of marshmallows to decorate the cookies.
Chill the dough for an hour.
Step 2: Roll the balls and bake
Preheat the oven to 350F.
Roll the chilled dough into golf ball-sized cookie dough balls, and place on a parchment-lined or greased baking pan.
Press a marshmallow or two into the top of each cookie. Give them ample room to spread. (We cooked 8 at a time.)
Bake for 13 minutes until golden brown and then cool the after on a wire wrack.
Here they are, just out of the oven… And beyond insane!
Because I’m a food blogger, I have to leave you with one more pretty shot.

- Use high-quality chocolate for top-notch cookies.
- Use an ice cream or cookie scoop to evenly roll out balls.
- Use all brown sugar for even chewier cookies.
- Use crushed pretzels instead of cornflakes for a saltier alternative.

- Seal them and store them in an airtight container if you want to make them in advance.
