We are eating more of a paleo diet at our house, and I have to say, I’m really like it. I feel healthier and I definitely have more energy.
But now that it’s the holiday season, I don’t want to feel deprived because I love holiday treats!
So when Bounty asked me to come up with a recipe for the holidays, I knew I wanted to make something that works with my diet, but also feels like a splurge. I’m so happy I whipped up these paleo coconut macaroons. They are absolutely delicious!
The best part is they have no grains — just egg whites, unsweetened coconut flakes, walnut meal, vanilla, and the tiniest bit of sweetener. And you can put them together in about 10 minutes.
Paleo Coconut Macaroons
Ingredients:
- one 14oz bag of unsweetened coconut
- 3 egg whites
- 1/2 cup of almond or walnut meal
- 1 teaspoon vanilla
- 3 tablespoons granulated sugar
- 1/2 teaspoon kosher salt
Directions:
Preheat your oven to 325F
In one bowl, mix the coconut, nut meal, and salt.
In a second bowl add egg whites and beat until the eggs start to froth. Add the sugar and vanilla and continue to beat until you get a firm peak when you pull the mixer out of the egg whites.
Fold the coconut mix into the egg whites until it is just mixed.
Take a tablespoon and scoop them out onto your baking sheet. You can place them close together because they don’t spread.

Bake for 13-15 minutes until they start to brown.
They are soft, coconutty, and crisp on top. Plus the walnut meal gives them a slight earthiness. These are my new favorite dessert!
I will definitely be bringing these to my in-laws on Christmas Day!
