It’s Memorial Day Weekend and the official kick-off to summer! We all love summer BBQs, but to be honest, the food can get a little… boring.
For me, it was all about making something simple, that mixed sweet and savory (my new favorite flavor combination) and to put it into one punchy little appetizer bite.
Introducing my peach basil bruschetta with goat cheese served on graham crackers!
What’s so tasty about this bruschetta is that layered on top of the crunchy sweetness from the graham crackers, is the tangy creaminess of the goat cheese, the hit from the ripe peaches, the earthiness from the basil, the pop of acid from the vinegar, the mellowness from the olive oil, and the pucker from the lemon.
What makes this dish stand out is that it is quick to make, it’s bright and full of summer flavors, and it would be an absolute hit at your next BBQ this summer.
Peach Basil Bruschetta with Goat Cheese
Makes 12 bruschetta
Prep time: 15 minutes
Ingredients:
- 12 graham crackers
- 1 cup creamy goat cheese
- 4 ripe peaches cut into small cubes
- 10 big basil leaves cut into strips
- 1 lemon
- Dash of balsamic vinegar for each bruschetta
- Salt
Directions:
Add juice from one lemon to your bowl of cut up peaches.
Spread goat cheese on each of the graham crackers. Layer a tablespoon of peaches on top of the goat cheese.
Add a sprinkling of salt and a small dash of balsamic vinegar.
Garnish with 3-4 strips of basil.
Serve cool and enjoy!
I served mine on a pretty white platter on my red checkered picnic blanket. I thought they each looked like a little bite of summer and the perfect snack for the holiday weekend.
My family thought so, too, because they were gone in in seconds flat.
We served them with some homemade lemonade from our lemon tree. I love summer and all its flavors!
