For Mother’s Day, I tasked my husband and daughter with coming up with a recipe that was delicious, simple, and that a mom (like me) would love.
And you know what they chose? Quick and easy Funfetti cake mix donuts with extra sprinkles (the extra sprinkles was my daughter’s idea). What mom, or kid, for that matter, wouldn’t love more sprinkles in their lives?
Because the goal was to make this super simple so any non-baker (or dad or grandfather or aunt or significant other) could pull this off, we chose to use boxed Funfetti cake mix as our base and some buttermilk to make the donuts extra moist and tender.
The recipe was a snap
Quick and Easy Funfetti Cake Mix Donuts Recipe
Ingredients:
for the donuts
- 1 box Funfetti Cake Mix
- 2 tablespoons vegetable oil
- 3/4 cup buttermilk
- 2 large eggs
for the glaze
- 2 cups powdered sugar
- 1/4 cup milk
- 1 teaspoon vanilla
- 1 cup of rainbow sprinkles
Directions:
Add the eggs, oil, and buttermilk to a large bowl and whisk until completely combined. Whisk in the cake mix.
Place donut batter into a large Ziploc bag. Cut one end and pipe the donuts in the donut pan.
Bake for 8 minutes until a toothpick comes out clean.
For the glaze, add the powdered sugar to a mixing bowl. Pour in the milk, add the vanilla, then whisk until smooth.
Now here comes the ooey, gooey messy part. Dip the donuts into the glaze. Place on a cooling rack. Let the glaze dry, then double-dip. Trust me, it makes the glaze thicker and whiter.
Add sprinkles to the tops of each donut.
(Okay, this was the highlight for me. I watched the glee on my daughter’s face as she did this, and it made me think about how being her mother is one of the best blessings of my life.)
Lainey got to eat the first one and said it was absolutely delicious!
I tried one, too, even though it’s not yet Mother’s Day, but it is my job.
The donuts turned out moist, tender, and had that yummy birthday cake flavor, and the glaze was the perfect delivery vehicle for the sprinkles.
