Ingredients and Supplies
- Skinny Margarita mix: This mix is a low-calorie and low-sugar option – It typically contains natural sweeteners like stevia or erythritol instead of regular sugar.
- Blanco tequila: Blanco or silver tequila is a clear tequila that has a smooth taste and is not aged like other tequilas.
- Unflavored gelatin: You will need unflavored gelatin to set the jello shots. Make sure to use the right amount of gelatin for the amount of liquid you are using, as too much or too little can affect the texture.
- Coarse salt: Coarse salt is used as part of a classic Margarita experience. You can use regular table salt if you don’t have coarse salt.
- Sweetened lime juice: Sweetened lime juice gives the jello shots their signature Margarita flavor. You can use fresh lime juice and sweeten it with a sugar substitute if you prefer.
- Lime zest: Adding lime zest to the jello mixture will give it a fresh flavor. Make sure to zest the limes before juicing them.
- Limes: You’ll need fresh limes with firm, smooth skin.
How to Make Skinny Lime Margarita Jello Shots
Step 1: Prepare the limes
Cut each lime in half. Use the pumpkin carving knife to score the inside of the limes.
Gently peel back the lime pulp. I continued to use my hands to peel and remove the pulp. However, you can use a spoon to scoop it out as well. Place the empty limes into mini cupcake tin.
Step 2: Make the cocktail mixture
Pour 1 cup skinny margarita mix into a small saucepan. Sprinkle the unflavored gelatin into the mix. Heat (don’t boil) the mix and gelatin on low until the gelatin completely dissolves. Remove from heat and cool.
Add the ¾ cup tequila to the margarita mix. Add the 2 tablespoons of sweetened lime juice (I just added sugar to the lime juice to sweeten it).
Step 3: Fill the limes
Fill each of the lime halves with the mix. Chill for 3-4 hours or overnight until the jello shots are solid. Sprinkle coarse salt and lime zest on the shot before you serve!
Step 4: Cut the shots
Cut into slices and serve!
These shots are refreshing and fun for summer!
Tips and Substitutions
- Adjust sweetness: You can add more or less sweetened lime juice to your liking. You can also use a different sweetener like honey or agave nectar instead of sweetened lime juice.
- Use different flavors: If you don’t like the Margarita flavor, you can use a different flavor of sugar-free gelatin mix. Some popular flavors include cherry, grape, and raspberry.
- Add fruit: You can add chopped fruit to the jello mixture for a fun twist. Try adding diced strawberries or blueberries to the mix before it sets.
- Use different types of tequila: If you don’t have blanco tequila, you can use reposado or anejo tequila instead. These types of tequila are aged and have slightly different flavor profile.
- Use limeade: If you don’t have sweetened lime juice, you can use limeade concentrate instead. Just make sure to dilute it with water to the appropriate ratio.
- Make ahead of time: Jello shots can be made ahead of time and stored in the fridge until ready to serve. This makes them a great option for parties and events.
