Here’s my take on a poke cake. Instead of “poking” the cake with holes, I decided to create a strawberry lemon Jello cupcake recipe with an actual Jello filling surprise inside! I can’t wait to serve these to guests to see their reaction!
STRAWBERRY LEMON JELLO CUPCAKE RECIPE
- White or yellow cupcakes (homemade or from a mix)
- 1 pkg. (6 oz.) JELL-O Strawberry Flavor Gelatin
- 1 pkg. (3.4 oz.) JELL-O Lemon Flavor Instant Pudding
- 1 cup cold milk
- 3 cups thawed Cool Whip
- Lemon zest for garnish
Bake 12 cupcakes and let cool.
Prepare strawberry Jello using the directions on the package. Refrigerate for 5 hours.
Prepare lemon frosting by whisking lemon pudding mix and milk in large bowl, then stirring in Cool Whip.
Using a cupcake corer or knife, carefully remove the center of the cupcakes.
Using the cupcake corer or a knife, cut out circular pieces of Jello. Carefully insert your Jello cylinders into your cupcakes. Lainey, my daughter, loved this part!
Frost cupcakes with lemon frosting and top with fresh lemon zest. Refrigerate cupcakes until serving.

These cupcakes have a sweet and tangy flavor from the light and airy lemon frosting, to the cake-y vanilla cupcake, to the cold and slippery strawberry Jell-O. Total fun in your mouth!
