1 ½inchpiece of fresh gingera little bigger than a walnut
2lemongrass stalks
2cupswater
2cupssparkling water or club soda
4cupsof ice
Instructions
Peel and quarter the ginger. Trim the bottom 4 inches of the lemongrass stalks, and cut in half. Put the ginger, lemongrass, salt, and sugar into a saucepan with two cups of water. Put it on medium high heat, stirring occasionally, until it is just about to boil. Then take the pan off the heat, and let it sit for 10 minutes.
Strain the liquid into a pitcher along with the lemon juice. Mince and add the strawberries. Now you can add the sparkling water (preferably chilled). Serve in glasses filled with ice.
Notes
Float lemon slices in the glasses for a fun garnish.
